Crispy sweet potato wedges

dusted with our paprika, these wedges are smoky and crispy on the outside and soft and completely delicious on the inside

1 tbsp Spice Up's Spanish Smoked Paprika
2 large sweet potatoes
1 tbsp cornstarch
pinch of salt
1 cup vegetable oil

Instructions

Step 1:

Slice peeled or unpeeled (your choice) sweet potatoes in half then half again. Continue until you get all your wedges equal in size with a thickness of about 2-4 inches. This will help the wedges cook evenly.

Step 2:
Pour the vegetable oil in a saucepan big enough to support the wedges and set to medium heat. If you do not want to fry your wedges or prefer to bake them, you can take this moment to preheat your oven to 200°C or gas mark 6.

Step 3:
In a small bowl, mix together the paprika, cornstarch and salt thoroughly. Sprinkle these all over your fries. Try to make sure all the sides of the wedges are coated as this ensure it will get evenly crisp during the cooking process. After this, use a large metal spatula to drop the wedges into the oil. We recommend dropping in around a 1/4 of all your wedges in at a time. Let each batch fry for approximately 6 minutes, turning after every 2 minutes. Repeat this process until you have cooked all your wedges. If you are baking your wedges, drizzle with a bit of oil and put them into the oven after seasoning for 20 minutes, turning them after 10 minutes.
