Blistered mini peppers in soy sauce relish

This dish is made effortlessly in one pan and is perfect for a dinner party or an accompaniment to any of your culinary creations

Ingredients

Main

1/2 tsp Spice Up's Tunisian thyme
300g of mini peppers or shishito
peppers
3 tsbp olive oil
1 tsp chopped ginger
2 cloves of garlic
1 tbsp soy sauce
1 tsp pure maple syrup
pinch grated ginger
OPTIONAL: bunch chopped
coriander

Instructions

Step 1:

Start by washing and drying the peppers well with a kitchen towel. Then transfer them to a bowl, add half the amount of your oil, along with the thyme, a pinch of salt and pepper. Toss until each pepper is generously coated.

Step 2:
When ready, heat a large frying pan on medium heat and add the peppers to the pan. Cook until blistered this should take around 2-3 minutes.

Step 3:
When ready, remove the peppers from the pan and lower the heat to medium-low. Add in the remaining oil, diced red onion, garlic and ginger and saute until the onions have softened.

Step 4:
Add the soy sauce, and maple syrup and saute for another 30 seconds. If you would like, top the peppers with fresh coriander and eat while hot.
